1、原料处理。取黄豆5公斤,去壳筛净,洗净后放进水缸内浸泡,冬天浸泡4~5小时,夏天2.5~3小时。浸泡时间一定要掌握好,不能过长,否则失去浆头,做不成豆腐。

2、将生石膏250克(每公斤黄豆用石膏20~30克)放进火中焙烧,这是一个关键工序,石膏的焙烧程度一定要掌握好(以用锤子轻轻敲碎石膏,看到其刚烧过心即可)。石膏烧得太生,不好用;太熟了不仅做不成豆腐,豆浆还有臭鸡屎味。

3、磨豆滤浆。黄豆浸好后,捞出,按每公斤黄豆6公斤水比例磨浆,用袋子(豆腐布缝制成)将磨出的浆液装好,捏紧袋口,用力将豆浆挤压出来。豆浆榨完后,可能开袋口,再加水3公斤,拌匀,继续榨一次浆。一般10公斤黄豆出渣15公斤、豆浆60公斤左右。榨浆时,不要让豆腐渣混进豆浆内。

4、煮浆点浆。把榨出的生浆倒入锅内煮沸,不必盖锅盖,边煮边撇去面上的泡沫。火要大,但不能太猛,防止豆浆沸后溢出。豆浆煮到温度达90~110℃时即可。温度不够或时间太长,都影响豆浆质量。

5、把烧好的石膏碾成粉末,用清水一碗(约0.5公斤)调成石膏浆,冲入刚从锅内舀出的豆浆里、用勺子轻轻搅匀,数分钟后,豆浆凝结成豆腐花。

6、制豆腐。豆腐花凝结约15分钟内,用勺子轻轻舀进已铺好包布的木托盆(或其它容器)里,盛满后,用包布将豆腐花包起,盖上板,压10~20分钟,即成豆腐。
